Olathe Corn and Poblano Soup
Ingredients
12 Ears of Corn (or 4 1 lb bags of frozen Corn)
2 quarts vegetable broth
1/2 Gallon of Milk (I used low fat milk)
3 Poblano Peppers
3 jalapeno peppers (stem and seeds removed)
2 large onions
1 red bell pepper
2 tablespoons of olive oil
salt
pepper
Cut corn from the cob. Toss the kernels in olive oil, place on a cooking sheet and place in the oven at 350 for 20 minutes or until lightly browned. In a stock, pot combine the vegetable stock and milk. Place cobs in simmering stock pot. Chop onions, poblanos and jalapenos sautee over medium heat until transluscent. Remove cobs from the stock pot and add onions and peppers mixture. Simmer for 30 mins. Run through food processor and serve.
Upon his return, I'm planning a couple of surprises. One of these surprises is baking him his favorite cake, ever. A couple of years ago, just after his grandmother passed away, Mike's sister compiled a little photo book with pictures of his grandmother along with her infamous recipes indexed inside. These recipes are those that Mike grew up with and they are written in his grandmother's handwritting. Among these recipes, is the one for Mike's favorite cake. It may sound weird, but hear me out. It's called the Chocolate Mayonnaise Cake. Mayonnaise? In Cake? It makes for an extra rich, moist cake. I think it's basically the lazy way of adding eggs and oil, but who am I to be the judge.
The last time I tried to make this cake it almost came out perfectly. The first layer was great! I set it aside to cool as I put the second layer in the oven. I pulled the second layer out of the oven, set it on the stove and after a few minutes, realized the burner I placed the layer to cool on had been on. You can guess what happened next. The middle layer of the cake, just on the bottom was burnt chocolate. Mike's dad had come over for dinner, luckily he likes things burnt so we sent the cake home with him. I also had a slight catastrophe with the frosting, but we won't even get into that. I'm going to do it right this time.
